Trying to find out if there is away to update a file that has been uploaded to a column. Is that possible?

I looked into deleting the files but if I want to do that it appears I need to delete or clear out all the files. Which I do not want to do. It won’t work for our workflow. (How to remove / delete file from item via API)

If I could update the file, then I’d be alright. But deleting them all is a no go.

Is there a way to update files?

As of today there is no mutation for modifying an existent file. You can delete them but not modify them.
