I have several supplier accesses (guest) to create on the same board, but I don’t want them to be able to see their name or email address. Is it possible to hide other users from them?

You can do that if you have an enterprise account with the item viewing permissions feature.
If you do not have an enterprise account, you would have to do something else like creating a specific board for each guest, and feed each of those boards the information from the main board.
