This may be a really stupid question, but I am looking to incorporate a significant part of a workflow to include using the Column ID, which can only be retrieved via the Developer Mode Beta. I simply want to ask the community if there is any substantive risk of Monday getting rid of this Developer Mode in the future, which would completely mess up this workflow or if the likelihood is that they would never restrict access to the Column ID moving forward?

I would be extremely surprised if the developer mode was removed. It wouldn’t make sense as it would remove this ability for every developer trying to extend the platform.
I think you’re safe in this regard.
If you are worried, you can retrieve columnIds from the API, so you could also build a little UI to retrieve the board columns and then allow the user to select the column from a dropdown list instead of manually typing in the column ID. If you are using a custom field in the workflow or sentance builder, you can look at a dynamic list as well.
